Osso Buco with Gremolata


This is acclaimed Chef Andrew Spence’s version of the classic Italian dish, made with beef shins, cut into thick steaks which are then slow cooked in a rich tomato and white wine sauce. To accompany this, Andrew serves a gremolata or pesto of parsley, olive oil, lemon, and garlic.
